Personal commitment:
The reason my husband and I have been able to continue working as professionals for many years is because we have always paid particular attention to our diet, believing that maintaining good health is essential. Even when we are busy, we rarely eat out, avoid junk food, and make almost every meal at home, focusing on Japanese food, including sushi.
Records show that Japan was founded about 2,700 years ago, making it the longest-running country in the world. The history of sushi dates back to about 1,200 years ago, and the current sushi style was created about 200 years ago.
Japanese summer is humid and hot, and in winter, especially in the northern and mountainous regions, it is cold and snowy. Many people are also accustomed to working long hours. I think one of the reasons why Japan has been one of the world's longest-living countries for so many years, even under such harsh living conditions, is its healthy and varied food culture, including seasonal seafood and mountain produce, as well as fermented foods.
Seafood contains many nutrients necessary for the human body, such as highly unsaturated fatty acids such as DHA and EPA, vitamins, and essential minerals. In addition, the vinegar used in sushi rice is said to have effects such as suppressing the rise in blood sugar levels after a meal, reducing body fat and visceral fat, lowering blood pressure, and recovering from fatigue. The kelp used to add umami to the vinegar also contains a wealth of minerals.
It is my commitment to make people happy by offering nutritious and healthy Japanese food in the clean air of our exhaust-free hydrogen food wagon, whether they are at home with their beloved family and pets, at a party with close friends, or at a company event, and so on.
